You can't make a "funny guy" be more serious, per se. At least not on your schedule. But I don't think anyone really operates all the time on one level. That's why Robin Williams and Jim Carrey also take dramatic roles. They want to explore their different sides and irritate us in new ways. Your "funny guy" might not be showing you his other, more sincere side yet because he thinks that you may like him only for the chuckles. In a word -- he's shy.
My advice: Roll with it a few dates, after some time he could very well relax the gag reel and open up. You can also try to inspire him to be emotionally ambidextrous by showing him Jerry Lewis's, The Nutty Professor, intercut with tear-dropping moments from Jerry Lewis's Muscular Dystrophy Telethon. I'm not saying his sober side will definitely come out, but I'd be surprised if it sure don't.
