Try "thank you" and a smile.
He likes helping you when you need it and that is perfectly OK. No one is forcing him, it is his choice, isn't it. Guys really like to feel needed and useful, it is our version of feeling cherished and protected. Don't make a huge deal of it, but let him know you really appreciate it.
Also let him know, gently, if he steps over the line and and starts chipping away at your independance. Not saying it will happen, he sounds very sensitive in the good way, not the despairing Emo type of way, but it can. That is to be avoided at all costs.

Voice to text / text to speech software, most likely. It is pretty amazing and accurate, I have used it before myself when I have been unable to type due to injuries.

the question "how do you type if you're blind?" is pretty ignorant.
