I would just be honest and tell him it's something you're doing to make ends meet. It isn't a career, but something you need to do right now. Honesty is the best policy in this situation. If you change the subject, he'll wonder what's up. The more honest and realistic you are about it ("I know this might seem weird, but it is safe and I'm just doing it to make ends meet until something else comes along"), the more likely he is to be cool with your side gig.
If this is a guy you want to get serious with, you should let him know. You would want to know if he was doing something similar. If he's uncomfortable with it, that's his problem. Better to know now. But if he's actually a nice guy, he's not going to judge you for doing what you need to do to get by. Everyone knows it's tough out there these days. And be safe! Make sure your identity is being protected. Keep it away from potential employers outside of modeling who might be more conservative. And I don't think you need to tell someone you've just met.
