Hooking up and dating are both very dangerous in the workplace, and the stories very rarely have happy endings. When two people get together at the office, one of three things happens:
1) Both parties are alright with it, and they start to date.
2) Only one party is alright with it, and things get awkward.
3) Neither party is alright with it, and things get incredibly awkward.
Looks like Option 2 happened to you. You are fine with the night of sex and would be interested in something more. She was not and she's trying to put distance between the two of you so that you get the hint. The reason for this approach (I think) is that she's concerned that someone will find out and so doesn't want to risk sending you an e-mail or talking to you at your desk.
Your best bet at this point is to just move on. I don't think she's going to come around and there's nothing you can do to get her to. Remember your fun night with fondness and try to date outside your workplace.
