Great question! Valentine's Day can be tricky when it comes to gifts for your guy. There aren't as many obvious go-tos like flowers, chocolate or jewelry. How do you get him a thoughtful, romantic gift that is different than what he'd get at Christmas or on his birthday?
There are three genres of gift that never fail on Valentine's Day:
1. Food - They say the fastest way to his heart is through the stomach and...mmm, brownies...Sorry, got distracted there for a second. As you said, you're into baking, so now is your chance to bake those Star Wars cupcakes or Dr. Who cake complete with marshmallow fondant Tardis. Or maybe cook him a meal composed of his favorite foods or the thing you've been talking about cooking for him for a while. Think sweet and decadent -- this should be something you can enjoy together on Valentine's Day.
2. Booze - With all that food, he's going to need something to wash it down with. It never hurts to get a bottle of his favorite scotch/wine/energy drink with vodka. Get something you can both enjoy that will enhance the mood. So, absinthe basically.
3. Sexy - Whether it's lingerie or that sex toy you both had your eye on, Valentine's Day is the time to give a gift whose purpose is solely to get you laid. It's not like Christmas where you have to worry about him opening up a package with a wrapped dildo inside in front of his mom. Wrap the outfit you're planning to wear to bed and have him unwrap it instead. This is your holiday -- make it as sexy as you want.

Tickets to do something together maybe? Like for a band or sport he likes? Or paintballing or something?

I was thinking a cute/funny card, and uh...well, I was going to bake some Valentine's themed brownies, but the boyfriend has been trying to cut back on the baked goods, lately. Perhaps a nice note or poem. I'm not really sure yet. XD
