If he asked you out, presumably he wants you to feel comfortable and order whatever you want. If he only orders salad on the second date, encourage him to share an entree, appetizer, or dessert with you. Sharing delicious food is an important part of dating. You can also ask him about what sort of food he likes to gauge if he has any dietary restrictions or food issues. But I don't think this is something you necessarily need to read into. If it happens a second time, you could playfully say something about it with the goal of learning more about him.

I eat along the Glycemic Index because sugar & starches are migraine triggers for me. Some dates understand it & others, like the guy last night, don’t. Hell, he didn’t even know what the Glycemic Index was. He said, “Get on the treadmill in the morning, you’ll be fine.” WTFreak?!? Anyway…, take time to understand the method to his madness. It may be as simple as he likes his veggies. That would be way cool...
My boyfriend and I have been dating for a year and a half, and he always treats me out to nice restaurants but usually orders nothing/hardly anything for himself. I'd say it was a sign that he's trying to save money (for your wedding ring? Who knows!) While at the same time still wanting to spoil you. :)
