Well, she's funny for one thing. I liked her in Easy A and Crazy, Stupid, Love. And, now that I think about it, her brief cameo as Justin Timberlake's John Mayer-obsessed girlfriend was the funniest part of Friends With Benefits. Funny goes a long way with many guys. Contrary to popular belief, we like funny women.
There's also a realness to her that I think a lot of young stars today lack. She seems smart and spunky; like a girl you could play video games with and feel confident introducing to your parents. There's a certain "take no grief" quality to her, particularly in Easy A and Crazy, Stupid, Love. She'll dish it out and keep you on your toes. She's also cute, particularly if you like redheads. I can understand how guys could have a crush on her.

Though I do think it's a bit odd that they cast her as blond, boring Gwen Stacy instead of feisty redhead Mary Jane. It makes zero sense that blonde Kirsten Dunst played a redhead for three movies and then they cast as redhead as a blonde. And why are they including Peter Parker's parents? They are so unimportant to the overall Spider-Man storyline. Aunt May and Uncle Ben are basically his parents. Also, do we need another Spider-Man movie that retells his origin? The first movie wasn't that long ago. Uh, sorry for the nerd rant. Anyway, Emma Stone is proof that men like smart, confident, funny women. More Emma Stones please, Hollywood.
